Champignons, Kr\u00e4uterseitlinge)<br \/>\n60 g Parmesan<br \/>\n2 EL Butter<br \/>\n150 ml Wei\u00dfwein<br \/>\n2 EL frische Thymianbl\u00e4ttchen<\/p>\n<p><strong>1.<\/strong> 1 EL Oliven\u00f6l in einem Topf erhitzen. Quinoa gr\u00fcndlich mit warmem Wasser waschen, gut abtropfen lassen, dann in den Topf geben und 2 Min. bei mittlerer Temperatur anschwitzen. 500 ml der Gem\u00fcsebr\u00fche angie\u00dfen, Lorbeer hinzuf\u00fcgen und unter gelegentlichem Umr\u00fchren 13-15 Min. leicht k\u00f6cheln lassen. Dabei nach und nach so viel Br\u00fche angie\u00dfen, dass die Quinoa-K\u00f6rner weder zu trocken sind noch zu sehr in Fl\u00fcssigkeit schwimmen.<\/p>\n<p><strong>2.<\/strong> Inzwischen Schalotten und Knoblauch sch\u00e4len und fein w\u00fcrfeln. Pilze putzen, evtl. waschen und je nach Gr\u00f6\u00dfe ganz lassen oder halbieren. Parmesan reiben.<\/p>\n<p><strong>3.<\/strong> Restliches \u00d6l in einer Pfanne erhitzen, Schalotten und Knoblauch farblos anschwitzen, Pilze hinzuf\u00fcgen und braten, bis sie Farbe annehmen. Pilze mit Wei\u00dfwein abl\u00f6schen, Fl\u00fcssigkeit reduzieren. 4. Pilze mit Butter, Thymian und \u00b2\u2044\u00b3 des Parmesans unter das fertige Quinotto ziehen.
